Ingredients:

  • 500g of beef
  • 200g of bacon Capistrano, diced
  • Vegetables: onion, garlic, bell peppers, tomato, carrots (optional)
  • 2 corn cobs
  • 2 potatoes
  • 1 liter of beef broth
  • Salt, pepper
  • Chopped fresh cilantro

Instructions:

  1. Fry Capistrano bacon in the pot until crispy. Reserve bacon, keep the fat.
  2. Add onion, garlic, beef; brown. Add tomato, bell peppers.
  3. Pour in broth, bay leaves. Boil and simmer covered for 1 hour.
  4. Add corn, potatoes, carrots. Cook until tender.
  5. Add back bacon. Season with salt and pepper.
  6. Serve hot, sprinkle with cilantro.
